With respect to the role played by these non-Saccharomyces species in wine quality, they are known to have the capability to improve the wine aroma (Charoenchai et al. 1997 Esteve-Zarzoso et al. 1998). The available aromas in the grape impart and define the characteristics and the final quality of wine. Terpenic compounds account for most of these aromas. Grape processing liberates small quantities of aromatic terpenols however, odorless precursors in the grape present a large, untapped reserve for wine aromas. Not only is the aroma an important quality factor in wine but also the intensity of the color is another very important quality factor in red wine, where anthocyanins are the main pigments. Various enzyme activities can improve the process of winemaking and enhance wine quality. The yeasts involved in wine making could be important producers of these enzymes (for a review see Table 1).
Methods by which strains of the same species can be differentiated have been shown to be very important for yeast strain characterization. In winemaking, several studies have analyzed the diverse microflora of grapes and musts and several interesting methods have been developed (Figure 2).
Similarly, innovation in winemaking among 'new-world' producers has fostered unease among traditional producers about the legitimacy and fairness of these new oenological practices. This is expressed in a value-based dichotomy between 'artisanal' and 'industrial' winemaking for example, distinguishing traditionally made wine in oak casks from wine produced in stainless steel casks with oak chips to imitate the organoleptic effect of traditional casks, a subject of trade negotiations between new-world producers and European regulators (European Commission, 2003a,b,c). This assertion of values influences negotiations over the legitimate terms of access to markets and creates pressure to trade off other interests (especially freedom to use verbal indicators of certain traditional values) as an explicit quid pro quo for access to innovative or industrial oenological practices.
Ochratoxin A has been frequently detected in grapes and its derived products since 1996, with contamination limits fixed by the European Commission for dried vine fruits, wine and grape juice to protect consumers. Ochratoxin A is produced in vineyards, primarily by Aspergillus carbonarius. Meteorological conditions are a major factor in determining risk areas and years. The cropping system also can significantly influence the final toxin content in bunches. Ochratoxin A can increase post harvest, during drying or standing before crushing, but this toxin is not synthesized during wine making.
